Smoked Pork Ribs

Ingredients

  • 3 racks, (2LB AVG each) Pork Baby Back Ribs
  • 4 cans, beer
  • 1/2 cup, Rudy's Rub or other meat rub
  • 1/2 cup, Texas Pecan Oil
  • 1 small bag, Pecan Wood Chips soaked in water
  • 1 10oz jar, Pineapple Pepper Jelly
  • 1cup, favorite BBQ Sauce

Instructions

  • 1. Rinse pork ribs under cool water to remove excess blood, pat dry
  • 2. Remove membrane on bone side of ribs, then cut in half
  • 3. Rub both sides of ribs with a thin layer of Pecan Oil
  • 4. Sprinkle meat rub on both sides of ribs pressing seasoning into meat
  • 5. Pour cans of beer into top smoker bowl and fill bottom bowl with wood chips
  • 6. Place ribs on the racks and light fire, maintain the temperature between 200F and 225F and smoke for 4 hours
  • 7. Remove ribs from smoker and place on baking sheet; preheat oven to 350F
  • 8. In a pot on the stove, heat pineapple pepper jelly and BBQ sauce together until well blended
  • 9. Using a silicone brush, drizzle the pepper jelly sauce mixture onto both sides of the ribs. Place in 350F oven for 15 minutes turning ribs twice and basting once to bake sauce onto the ribs. Serve immediately and enjoy!
