Ingredients

  • Vinaigrette:
  • 1/4 cup fresh squeezed orange juice
  • 2 tablespoons Texas Pecan Oil
  • 1 tablespoon balsamic vinegar
  • 1 tablespoon rice vinegar
  • 1/2 teaspoon honey mustard
  • 1/2 teaspoon black pepper
  • 1 garlic clove, minced
  • Salad:
  • 2 tablespoons fresh squeezed lemon juice
  • 4 (6 ounce) salmon fillets, 1 inch thick
  • 2 teaspoons black pepper
  • 1 tablespoon Texas Pecan Oil
  • 1 (6 ounce) package fresh spinach
  • 4 oranges, peeled & cut into 6 slices

Instructions

  • 1. Preheat grill to medium high heat
  • 2. Mix ingredients of the vinaigrette in a large bowl and whisk together
  • 3. To prepare salad, rub pecan oil on all sides of fillets to coat
  • 4. Drizzle lemon juice then sprinkle and rub black pepper into fillets
  • 5. Grill salmon 5 minutes per side until fish flakes easily with a fork; remove skin from fillets
  • 6. Add spinach to vinaigrette bowl and toss well.
  • 7. Place 2 cups of spinach mixture on each of 4 serving plates
  • 8. Arrange 1 fillet & 6 oranges slices on top of greens
